I often find parents struggle with breakfast ideas. So here are 3 back to school healthy breakfast recipes.

Breakfast Egg Muffins

Yield: 12 individual muffin cups. with a little left over mixture

Ingredients:

Breakfast egg-muffin-sheenas kitchen

 

  • 6 eggs
  • 100ml milk
  • capsicums( 1/4 of each color green/red/yellow )
  • 1/2 onions( chopped)
  • 1 tomato( chopped)- seeds/flesh removed
  • 50g cheese (grated)
  • salt to taste
  • pepper to taste
  • oil to brush tray

 

Scrambled Eggs Sandwich

Yield: Serves 2.

Ingredients:

  • 3 eggs
  • 8 slices Bread(cut into circles)
  • 1 heaped tbsp butter
  •  Cucumber slices
  • tomato slices
  • Salt
  • Pepper
  • Oil
  • optional Skewers/toothpicks(to hold the bread)

 

 

Yoghurt parfaits

Serves 2
Ingredients:
yoghurt fruit parfait-sheenas kitchen
  • 1 Apple (chooped)
  • 200g strawberries  (chopped)
  • 200ml Natural yoghurt
  • 4 tbsp tsp of oats (2 tbsp for each glass)
  • pinch Cinnamon
  • Lemon juice+ zest

method:

  1. Get two glasses and start by layering the yoghurt at the bottom,
  2. top with the oats, apples and strawberries and top with a dollop of yoghurt with some lemon zest.
