Butter beans, tuna and smoked beef sausage salad

Serves 2

Ingredients:

  • 1 can butter beans in water (400g)
  • 1/2  small ripe avocado (chopped)
  • 100g smoked sausage (chopped)
  • 1/2 capsicum (chopped)
  • 4 tbsp. light tuna meat (use canned tuna chunk in brine)
  • 1/2 small red onion (chopped)
  • 1 medium lemon (zest and juice)
  • salt(optional) as tuna will be salty
  • black pepper
  • 3 tbsp. olive oil

Method:

  1. Drain water from beans and rinse with cold water net weight should be about 1 cup roughly 240g
  2. Place beans in a bowl and add all remaining ingredients
  3. Mix ingredients well together taking care not to mash the avocado
  4. serve and enjoy.

 

Notes:

* If smoked sausage is not available, use regular cooked sausage or choice of deli meats

* If in Kenya, the smoked sausage can be gotten from Nakumatt supermarkets the butchery section where they have assorted deli meats.
