Chicken Stew Kenyan style

Hi Guys, here is another simple chicken stew Kenyan style recipe. For this recipe i used broiler chicken which cooks much faster than kienyeji chicken. However if you prefer kienyeji, see recipe here.

Recipe: Serves 4

Ingredients:
  • 1 full chicken(cut into pieces)
  • 1 tbsp vegetable oil
  • 1 large onion ( chopped)
  • 1/2-1 tsp ginger (grated)
  • 2-3 grated cloves of garlic
  • 1 fresh green/red chili(optional)
  • 4 tomatoes (washed and chopped)
  • 1 large capsicums (chopped)
  • 2 tbsp curry powder
  • 1 chicken cube(optional)
  • salt(use sparingly if using a chicken cube)
  • 1 1/2 cups of water
  • handful of dhania

Method:
  1. In a large sufuria (sauce pan) heat oil, and fry onions until soft
  2. Add the ginger,garlic, chili and fry until aromatic
  3.  Add the curry powder and chicken cube and fry briefly about 15-30secs
  4. Add the tomatoes fry, cover with a lid and cook for 5 minutes or until tomatoes are soft
  5. Add the chicken pieces, stir well and fry for about two minutes
  6. Add the water, bring to a boil, cover and simmer for 10 minutes
  7. Add the capsicums, stir well, check the consistency and taste of stew simmer for 5 minutes.
  8. lastly add the dhania, stir well
  9. serve and enjoy with rice,chapati,ugali etc.
Please Note
You can add the hohos earlier if you prefer them further cooked.
This recipe can serve 6, but if you are considering seconds then 4 is a good number.

    cooking time is too brief…about 15 minutes for chicken??

    • Hi Kangai…thanks for your comment and observation

      Technically it is about 20minutes if you count from the moment I add the chicken…
      Plus as the water comes to a boiling point, that is also cooking time. There is always residual heat to account for after the cooking process….

      Generally anywhere from 20-30minutes…your chicken will be fully cooked.
      Depending on size,and if it is completely thawed.

    I have used this recipe about three times and it always makes my picky 8 y/o eat his plate clean.thank you. though if you could please tell me which kind of chilli it is that you use since I only have access to jalapenos, poblanos, serrano and cayenne.

    • Hey Cecilia… wow so exciting to hear your 8 y/o has been devouring the recipe whenever you make it… the chilli I use is birds eye chilli which is the thin type of chilli which is what is commonly available here in kenya which tends to be quite hot and is usually either green or red. So perhaps go with the serrano chilli would be close in flavour profile from the chilis you have mentioned. Though honestly you could use whatever type you like just use less or more depending how hot you want your food.
