Coconut Sweet potato and Ndengu Stew

This recipe was the result of a combination of different vegetables that I had in the fridge and pantry… So I decided to combine all of  them with some coconut milk because everything tastes better with coconut.

It was also a lunch recipe that I shared on my youtube series “what I eat in a day” where I share simple meal ideas to spark some creativity in your kitchen.  You can watch the recipe plus what I had for breakfast and dinner on that day, kinldy see the video below.

This recipe will serve about 3-4 people and can be enjoyed plain or with some steamed rice or chapati.

Ingredients:

  • 1 Onion(finely chopped)
  • 1 Celery stick(finely chopped)
  • 2 Carrots( finely chopped)
  • 1 large Sweeet potato
  • 2 medium Potatoes
  • 1 cup cooked ndegu(greeen gram lentil).
    Dhania
  • 1 pkt coconut powder (50g) mixed with 1 cup water about (250-300ml)
  • 1 tsp Turmeric powder
  • 1 tbsp Cumin powder
  • 1/4 tsp of cinnamon
  • Salt to taste
  • Black pepper
