Minced beef with capsicums and mushrooms

This is a really simple recipe with the option of adding as much veggies as you like. I love capsicums(hoho) and naturally I had them in my fridge.  I had mushrooms too, which often i like to cook for breakfast, but this time I decided to add them to the recipe. With mince meat you can pretty much add whatever vegetables you like i.e celery,carrots  etc… and now that I mention them, I had both but dint feel like the hassle of chopping more veggies:-)

I am currently adopting various healthy eating habits and thus other than accompany the dish with regular complex carbs i.e pasta, rice, potatoes etc, i choose to go with fresh sliced cucumber and grated carrot. Since this was actually a dinner meal it was pleasantly light and refreshing with my choice of accompaniments.

If you are trying to reduce on carbs before bed, or are on a paleo diet and the likes…then this is a superb recipe as it falls under that criteria.

Recipe serves 4

Ingredients:

  • 500g mince meat
  • 1 large onion (chopped)
  • 4 garlic cloves(chopped)
  • 1 can tomatoes (chopped)
  • 1 red capsicum(chopped)
  • 1 yellow capsicum(chopped)
  • 1 green capsicum(chopped)
  • 6-10 button mushrooms(sliced)
  • 1 beef stock cube
  • 1/4 tsp of black pepper
  • salt to taste(use sparingly if using a stock cube)
  • 2 tsp tomato paste
  • handful of chopped fresh parsley
  • 2-3 sprigs of rosemary
  • 1/4-1/2 cup water (optional if sauce is too thick)
  • Extra parsley to garnish

Method:minced-beef-paleo-low-carb

  1. Heat oil in a pan and saute onions until soft
  2. Add garlic and fry until fragrant but not brown
  3. Add minced meat and fry until brown
  4. Add tomatoes, capsicums, mushrooms stir
  5. Add tomato paste,stock cube and black pepper stir well and briefly simmer about 5 minutes
  6. Add the herbs, stir well cover and simmer for about 20 minutes or until sauce thickens
  7. Garnish with extra parsley, serve and enjoy
please note:
If using fresh tomatoes use about 6 medium sized ripe plump tomatoes and an extra 1/2 cup of water.
