Minced beef with capsicums and mushrooms

This is a really simple recipe with the option of adding as much veggies as you like. I love capsicums(hoho) and naturally I had them in my fridge. I had mushrooms too, which often i like to cook for breakfast, but this time I decided to add them to the recipe. With mince meat you can pretty much add whatever vegetables you like i.e celery, carrots etc… and now that I mention them, I had both but dint feel like the hassle of chopping more veggies:-)
I am currently adopting various healthy eating habits and thus other than accompany the dish with regular complex carbs i.e pasta, rice, potatoes etc, i choose to go with fresh sliced cucumber and grated carrot. Since this was actually a dinner meal it was pleasantly light and refreshing with my choice of accompaniments.
If you are trying to reduce on carbs before bed, or are on a paleo diet and the likes…then this is a superb recipe as it falls under that criteria.
