Pickled Red Cabbage
- 500g red cabbage sliced(1 small red cabbage)
- 2tbsp olive oil
- Pinch of salt
- 1-2 tbsp vinegar
- 1 heaped tsp sugar
1. Heat oil in pan, add your cabbage stir go coat well with oil
2.season with salt and black pepper stir well and let cook briefly until cabbage starts to soften
3. Add the vinegar and sugar Stir, the cabbage will change to a deep bright red/violet colour. Simmer covered for about 3-5 minutes until cabbage is limp but crunchy.
4. Serve and enjoy.
*The vinegar enhances the red cabbage colour and also acts as a preservative
*The sugar balances the acidity of the vinegar.
*This recipe is more of a taste and adjust recipe so feel free to play with the amounts i.e for a sweater taste add more sugar, for a tangy taste use less sugar.
* Also you can altogether omit the sugar and vinegar and just keep it simple with oil, salt and black pepper
This dish can be accompanied with fish fillet.
