Roast Chicken on Vegetables
Serves 2
Ingredients:
- 1/2 chicken leg
- 2 medium carrots(chopped)
- 1 large onion(chopped)
- 100g sweet potatoes (chopped)
- 2 celery stems(chopped)
- 8 mushrooms(halved)
- 2 tbsp olive oil
- 4 garlic cloves
- 2 fresh green chilies
- 1tbsp dry rosemary leaves
- 1 tbsp oregano
- 1 tbsp paprika
- salt and black pepper
- handful fresh parsley
Method:
- Preheat oven to 200C
- Make shallow insertions on the the chicken ( shallow horizontal cuts across the chicken)
- Rub chicken and vegetables with the spices and herbs
- insert 1 of the cloves in to the insertions made on the chicken
- Place vegetables in casserole /roasting dish and place chicken on top of the vegetables
- Roast in the oven for 15 minutes, turn chicken roast for 10min, turn again roast for 5 minutes and serve.
