Shakshuka ( Eggs in spicy tomato sauce)
Eggs in a spicy tomato sauce honestly whats not to like. This breakfast dish if you ask me, is literary the epitome of vegetarian breakfasts when it comes to praising eggs. The spicy tomato sauce fully compliments the eggs that you just cant get enough.

Ingredients:
- 1 tbsp olive oil
- 2 Eggs
- 4 Tomatoes (chopped)
- 1/2 Red capsicum (chopped)
- 2 dry/Fresh chilies (chopped)
- 1 tsp Tomato paste
- 1 medium Onion (chopped)
- 2 Garlic cloves (chopped)
- 1 tbsp Cumin powder
- 1 tbsp Paprika
- Salt to taste
- Pepper to taste
- 1 tbsp Dhania (chopped)
Method:
- heat oil in a pan
- fry onions until soft
- add garlic fry until fragrant
- add the tomatoes fry briefly for about two minutes
- Then add the capsicums stir & fry for another minute
- add dry chili, tomato paste stir well
- add the spices paprika, cumin powder stir well
- salt, black pepper, cook 5 minutes until tomatoes are soft
- create holes in the sauce to gently pour in your eggs & season them with salt black pepper
- Cook covered with a lid or bake in the oven for 10 min, or until the eggs are to your liking.
- finish sprinkled with dhania and a drizzle of olive oil serve with chapatti
*serve with Chapati/nan/roti or plain old bread
