Boerewors in tomato sauce

Boerewors is considered as a south African delicacy but in kenya we enjoy our own version called mutura (kenyan sausage). Since i was not going to go through the traditional route and make my won with intestines, I did what any one of us would do… popped into the supermarket and bought my self a pack of borewors without all the fuss.
Recipe:
Serves 2:
- 300g boerewors
- 4 garlic cloves (finely chopped)
- 4 medium ripe tomatoes (chopped)
- 50ml red wine(cabernet/merlot/malbec) basically NON sweet ?
- 1 tsp thyme leaves
- 1 tsp oregano leaves
- Salt to taste
- Pinch of black pepper or to taste
- Table spoon or two of fresh Parsley to finish

Boerewors in tomato sauce
Method:
- Heat oil and brown boerewors in a pan then set aside.
- Add garlic to the pan, sautee until fragrant
- Add the tomatoes, dry herbs, pepper, salt stir and cook briefly about 2 minutes
- Add the wine,stir cook for a few seconds
- Return the boerewors to the pan and simmer covered for about 5 minutes or until boerwors are fully cooked and sauce is well incorporated and has naturally thickened. Finish with choice of fresh herbs…
- Serve over mukimo (see recipe)
